yesterday was a long time ago...

Fried Oyster With Egg

Ingredients :
300g fresh oyster
8 eggs
{ 100g sweet potato flour + 1 tbsp tapioca flour + 1/2 teaspoon salt + 1/4 tsp M.S.G. }
( mix well with one bowl of water )
2 stalks of spring onion
2 stalks of coriander leaves

Seasoning :
1/2 tsp salt
1/4 tsp M.S.G
some fish sauce ( add lastly )

Method :
1. Heat wok with oil fry the sweet potato starch till cooked .
2. Pour in egg, fry it till golden brown, add in fresh oyster and some fish sauce, stir fry evenly, add in spring onion & coriander leaves, serve it hot .

* Fresh oyster - Wash with water + Cornflour + Salt
- stir with hand gently, do not squeeze, drain dry & add corn starch + salt to season

* If use prawn season with salt + pepper powder + 1 tsp wine , remove shell and leave tail .

* Set aside 1 tsp fish sauce + 3 tbsp cold water ( boiled )

* Non- stick pan with some oil ( small fire ) stir evenly and fry till colour changes to transparent .
add egg , sprinkle some oil along rim for more crispy ( you can break bubbles ) .
fry till 定型 divide into parts and add oil along side .

* Flip over , fry till both sides turn brown , cut into small pieces & add sambal chilli + fish sauce and 3 tbsps water or oyster then add spring onion and coriander leaves.

* Sambal chilli - elephant brand ( tong guan food products )
