Fried Prawns With Oats

Ingredients :
500g prawns
2 tbsps evaporated milk
1 tbsp chopped garlic
5 egg yolks
1 tbsp chopped chilli
some curry leaves

To marinate :
1 tsp salt
1/2 tbsp wine
2 tsps sugar
some pepper powder

Seasoning :
1/2 rice bowl evaporated milk
2 egg yolks
1/2 tsp salt
1/2 tbsp sugar
3 tbsps oats

Method :
1. Clean the prawns, cut away the sharp point of the head and legs and marinate for 15 mins, then deep fry in hot oil, till fragrant, remove and drain.
2. Heat wok with oil, mix well egg yolks & evaporated milk, then deep fry the mixture into shreads, remove and drain .
3. Heat wok with some oil, add in seasoning, fry till golden brown, fragrant the chopped garlic, chilli and curry leaves, add in egg yolks seasoning and well fried prawns, stir fry evenly and serve.
