yesterday was a long time ago...
Fried Oyster With Egg
Ingredients :
300g fresh oyster
8 eggs
{ 100g sweet potato flour + 1 tbsp tapioca flour + 1/2 teaspoon salt + 1/4 tsp M.S.G. }
( mix well with one bowl of water )
2 stalks of spring onion
2 stalks of coriander leaves
Seasoning :
1/2 tsp salt
1/4 tsp M.S.G
some fish sauce ( add lastly )
Method :
1. Heat wok with oil fry the sweet potato starch till cooked .
2. Pour in egg, fry it till golden brown, add in fresh oyster and some fish sauce, stir fry evenly, add in spring onion & coriander leaves, serve it hot .
* Fresh oyster - Wash with water + Cornflour + Salt
- stir with hand gently, do not squeeze, drain dry & add corn starch + salt to season
* If use prawn season with salt + pepper powder + 1 tsp wine , remove shell and leave tail .
* Set aside 1 tsp fish sauce + 3 tbsp cold water ( boiled )
* Non- stick pan with some oil ( small fire ) stir evenly and fry till colour changes to transparent .
add egg , sprinkle some oil along rim for more crispy ( you can break bubbles ) .
fry till 定型 divide into parts and add oil along side .
* Flip over , fry till both sides turn brown , cut into small pieces & add sambal chilli + fish sauce and 3 tbsps water or oyster then add spring onion and coriander leaves.
* Sambal chilli - elephant brand ( tong guan food products )

Steamed Radish Cake
Ingredients :
1kg radish
3 stalks spring
600g rice flour
100g dried shrimps
100g potato starch
4 chinese sausage
100 corn flour
10 shallots
5 garlic
Seasoning 1 :
1 tbsp salt
2 tbsps sugar
2 tsps M.S.G.
4 rice bowls water
Seasoning 2 :
1/2 tbsp pepper powder
1/2 tsp 5-spice powder
1 tbsp sesame oil
5 rice bowls water
Method :
1. Mix rice flour, cornflour, potato starch with seasoning 1 & stand for 3 hours .
2. Cut the radish into strips and sausages into cubes form .
3. Heat wok with some oil , fragrant the shallots, sausage & dried shrimps, and drain well .
4. Fragrant the chopped garlic, add in sausage, dried shrimps, radish, carrot & seasoning 2 and boil for a while, pour in the flour mixture till thicken, then pour in the tray and steam for 1 hour till well cooked .

Fried Chicken With Shrimp Sauce
Ingredients :
1 chicken / 10 chciken wing
2 tbsps plain flour / self-raising flour * no nid bp
2 tbsps potato flour
1 tsp baking powder
To marinate :
1 tbsp shrimp sauce
1/2 tbsp ginger juice
1 tbsp rose wine
1 tsp sugar
1/2 tsp M.S.G
1/2 tbsp cornflour
some pepper powder
char shao sauce for colouring
Method :
1. Clean the chicken and cut into pieces, then marinate for 1 hour.
2. Mix plain flour, potato flour & baking powder into chicken pieces.
3. Deep fry the chicken under medium heat till golden brown, drain well and serve.

Pork Ribs With Champagne
Ingredients :
1 kg pork ribs -> pork chop meat
To marinate : * 3 hrs
2 tbsps water
2 tbsps light soya sauce
1 egg yolk
1 tbsp meat tenderizer
1 tsp bi-carbonate of soda
1 tbsp cornflour
some 5-spice powder
1/2 tbsp ginger juice
1/2 tbsp garlic juice
Serving Sauce :
1/2 rice bowl champagne - white wine
3 tbsps 7-up soft drink
3 tbsps lemon juice
1/2 tbsp salt
2 tbsps sugar
1 tbsp custard powder
Method :
1. Clean the spare ribs and marinate, then deep-fry till cooked, remove and drain well.
2. Boil the serving sauce, add in spare ribs and stir evenly.
* Beat the meat so as to tenderise it.

Fried noodle With Assorted Ingredients
Ingredients :
200 g dry noodle
100g prawn meat
150 green vegetable
200g lean pork
200g fish meat
1/2 tbsp chopped garlic
Serving sauce :
1 1/2 rice bowl chicken stock
1 tsp salt
1/2 tbsp oyster sauce
1/2 tsp M.S.G.
some pepper powder and sesame oil
Method :
1. Soak dry noodle till soft, then shallow fry till golden brown, remove and place on serving plate.
2. Heat wok with some oil, frarant the chopped garlic, add in lean pork, prawn, fish and vegetables, sprinkle some wine, pour in serving sauce, add some potato starch to thicken, the sauce, then pour over the noodle and serve.

Fried Prawns With Oats
Ingredients :
500g prawns
2 tbsps evaporated milk
1 tbsp chopped garlic
5 egg yolks
1 tbsp chopped chilli
some curry leaves
To marinate :
1 tsp salt
1/2 tbsp wine
2 tsps sugar
some pepper powder
Seasoning :
1/2 rice bowl evaporated milk
2 egg yolks
1/2 tsp salt
1/2 tbsp sugar
3 tbsps oats
Method :
1. Clean the prawns, cut away the sharp point of the head and legs and marinate for 15 mins, then deep fry in hot oil, till fragrant, remove and drain.
2. Heat wok with oil, mix well egg yolks & evaporated milk, then deep fry the mixture into shreads, remove and drain .
3. Heat wok with some oil, add in seasoning, fry till golden brown, fragrant the chopped garlic, chilli and curry leaves, add in egg yolks seasoning and well fried prawns, stir fry evenly and serve.
