yesterday was a long time ago...

Clay Pot Pork With Preserved Vegetables

Ingredients :
800g Pork Belly
5 stalks spring onion
200g preserved vegetable
10 garlic

To marinate :
1 tbsp sugar
2 tsps sesame oil
1/2 tbsp thick dark soy sauce

Serving sauce :
1 tbsps dark soy sauce
4 tbsps wine
1 tsp thick soy sauce
4 1/2 rice bowls hot water

Method :
1. Boil pork belly for 25 minutes, drain and rub dark soy sauce over the skin, deep fry till brown and cut into slices.
2. Wash and cut the preserved vegetable into small pieces, marinate thoroughly for later use.
3. Heat claypot with some oil, fragrant the garlic and perserved vegetable, remove.
4. Place the spring onion and pork belly into claypot, lay the preserved vegetable on it, pour in serving sauce and simmer till tender.

Clay Pot Prawns

Ingredients :
600g prawns ( seasoned )
2 stalks spring onion (cut into bits )
1 stalk coriander leaves
1 red chilli ( chopped )
1 tbsp chopped garlic

Serving sauce :
1/2 rice bowl water
2 tbsps vinegar
1 tbsp black bean paste
2 tbsps sour plum paste
2 tbsps tomato sauce
1 tsp sesame oil

Method :
Heat clay pot with some oil, fragrant the chopped garlic, spring onion, red chilli & serving sauce, sprinkle some wine, add in prawn & simmer till cooked, add in spring onion and coriander leaves .

Fish Head In Vermicelli Soup

Ingredients :
600g fish head
few stalks chye sim
500g vermicelli
few slices ginger

To marinate : * 30 minutes
1 tbsp ginger wine
1/2 tsp M.S.G.
1/2 tsp pepper powder
spring onion - 2 stalks
1 tsp salt
2 tsps cornflour
some sesame oil ( later into fish )

Serving sauce :
6 rice bowls stock - 500g chicken bone & 300g fish bone ( 8 bowls boil till 6 bowl ) ginger + onion
1 1/2 tbsp fish sauce
some pepper powder
1 1/2 tsp salt
1 tsp M.S.G.
some sesame oil

Method :
1. Heat wok with lots of oil till golden brown cook and drain well .
2. Heat wok with little oil to stir fry ginger till fragrant .
3. Switch to high heat and sprinkle wine put in serving sauce add M.S.G. add chye sim add vermicelli and boil for one minute only. add fish when about to boil , add milk ( HL - 4 tbsps ) , lower fire to medium , bring to boil then off fire .
